Just find the mortar in the export_descr_buildings.txt and add Genoa to the list of countries that have it.
are you sure? it seems it doesn't work perhaps there are other files to modify
yes I'm quite sure it works that way. I can't give more specific instructions since I don't have access to the file atm. Note that it might take a turn for it to appear in the unit/building browser.
prob is i cannot watch one or 100 turns since the game crashes to deskshop
whats the name in the edu for the faction genoa? isnt it cumans? if so add ,cumans at the end of the following lines in the edu for the unit NE Mortar:
ownership england, ireland, norway, scotland, venice, papal_states, sicily, knights_templar, jerusalem
era 1 england, ireland, norway, scotland, venice, papal_states, sicily, knights_templar, jerusalem
era 2 england, ireland, norway, scotland, venice, papal_states, sicily, knights_templar, jerusalem

Cumans are most certainly not Genoa. It'll be Milan (the vanilla name) if anything.
I once added something like the culverine to turkey. It worked in custom battles, but the soldiers using the gun were invisible. What did I do wrong? I added it only in the EDU. Was that the problem? Or is it something with skins and animations?
You also need to add a texture entry for turkey into the modeldb file. There are tutorials on how to do this in the Mod Workshop section of the forums.

First of all open the EDU
Find NE Mortar and add Milan to the ownership and era lines like I have done
ownership england, ireland, norway, scotland, venice, papal_states, sicily, knights_templar, jerusalem, milan
era 1 england, ireland, norway, scotland, venice, papal_states, sicily, knights_templar, jerusalem, milan
era 2 england, ireland, norway, scotland, venice, papal_states, sicily, knights_templar, jerusalem, milan
Luckily for you, the modders have already entered all that is needed in the MODELDB file.
Then you have make mortars buildable through the export_descr_building file.
Use the search function for NE mortar and change all entries by adding Milan, like I have done
cannon_maker city requires factions { northern_european, egypt, moors, turks, kwarezm, eastern_european, southern_european, } and event_counter gunpowder_discovered 1

Then you are good to go. All changes are save game compatible. Don't forget to backup your files incase you screw something up.

You would have to change the MODELDB file, also known as battle_models, located in Data/Unit_models folder
Use search to locate culverin. We'll give it Ireland textures as they are green, Turkey doesn't have their own textures for the culverin. Change the things like I have done in the bold text

Else you will not be able to start SS.
And do backup your MODELDB file because if you do something wrong, you will not be able to start the game.
Use my instruction in the post above for milan if you don't know how to make the culverins buildable. All changes are save game compatible.

Light swordsmen have a texture and everything for Sicily after I enabled them for them, but how can I get them to be trainable in the campaign?

you would have to open the export_descr_building file, located in your data folder. Use search to find all instances of light swordsmen and add sicily . If you use RR they won't be recruitable until after you get the mongol invasion warning.
for example
recruit_pool "Light Swordsmen" 1 0.17 1 0 requires factions { poland, hre, spain, milan, venice, papal_states, hungary, portugal, sicily, }
Remember to change all entries for Light swordsmen.
