Two completly different questions...

Well I have one questions for the EB team...and one for individual unit skinners...

1) well, my first question is will there centrions and flag bearers for roman units?

2) and my second question is, if there are going to be centrions and flag bearers, how do you edit them using gimp?

1- Yes.

2- You have to convert the .texture file, the skin of the unit, into a .dds or .tga using a program written by someone on the forum (can't remember here). You can simply find it with a little searching on the MTW2 modding forums here at the twc.
