You can't make roads, but there's a lot you can do to determine how they move through your map by the ground types that you place around them. GrnEyedDvl has done a lot of work on this:
Map Roads Project
As for bridges and rivers, they are drawn into the map_features.
To make a bridge you have to place a white pixel on the river.
The problem is, you need to build roads (I think) in order for them to show up. Once a road shows up it will take the easiest path to where its going and create bridge where you placed a river crossing.
But you can't decide exactly where sometimes, especially if you make several river crossings, the road will choose the easiest route.

Not quite correct, if you look at map_features each river will consist of a dark blue line (exactly 1 pixel wide), with at one or more white pixels, and one or more light blue pixels. The white pixels represent the source(s) of the river, while the light blue pixels are the fords (which become bridges with roads).

Sorry, your right Squid, been working on buildings and non-map stuff so long I've forgotten some of my basic mapping skills. That's why I tend to always reference this when working: Myrdraal's Complete Mapping Guide
Here's the list of colors used in map_features
Here are the RGB values:
River - Blue (0,0,255)
Volcano - Red (255,0,0)
Cliff - Yellow (255,255,0)
