Allah willing, I hope to be able to post some pics of the Pronoiarioi, Scholarioi and Varangians sometime soon...spent the better part of the past two weeks on them.
Era works, but one thought I considered a while ago was to have Pronoiarioi availability linked to agricultural improvements as well as military, as historically the Pronoiarioi are a spin-off of the Pronoia land grant system. It would be a double-edged sword in that the Pronoiarioi would be lower cost (paid for by their share of the taxation they collect), but the yield of the land would be lower (same reason).
As the Menavlatoi seem to have been small fractions of larger units (10% of a 1000 man Chiliarchy), you could have them as a small (20-30) man formation that doesn't make sense for en-masse use, but is available for 'colour'. And you can still use them in historical fashion by deploying them across the frontage of lesser infantry types about to receive cavalry. Total War has problems replicating the mixed Byzantine units, but you can get some of the effect if you are willing to sacrifice absolute combat power (and unit slots).

A few things I should point out tho
-No boots for the feet? Imagine walking with all that chainmail around your feet, would have been really uncomfortable.
-The last axe doesn't look Norse or Anglo-Saxon, perhaps you could replace it with the effective bearded axe?
