I wouldn't advise any type of CoA on non-noble units. You should probably lose double headed eagle on peasants.
Also, it would be better to make them a cross between javelinmen and spearmen.
Also, lose the peasant in the name since peasants were never recruited in the army in Serbia.
In the early era serbian units didn't evolve much from the original slavic units. That means lot's of unarmoured spearmen and bowmen.
In high and late era, units became more armoured. For the general idea how should those units look like check out the units in this thread.

also now the serbian knights are only avaliable for serbia (once was mercs) now its exclusive for serbia !

this units (knights) are late units, thats why the heavy armour
obviously you'll find more light armour in another units !!

Tha late heavy cavarly units should be wearing the full plate armour..In Kosovo battle(1389),Serbian army had several hunderts full plate armoured knights,and also in Battle of Nicopolis(1396) much more...Although,they could be special unit..Something like Gothic Knights for HRE..Keep on with good work

They have too much "eastern look". In the late period, huge income from mining was used to import high quality armour from Italy, usually Milan. So better use some Milanese armour for SK. There are plenty of pictures of 14th-15th century milanese armours...
Also you may consider giving those early archers, spearmen and javelinmen bonuses for fighting in wood and snow and making some of them experts in hiding in the woods. Serbs in early period were quite adept at ambushing, and densely forested and mountainous relief of the Balkan only worked in their favour. They had to be, obviously since those lightly armoured units couldn't stand up to more heavily armoured Romans in open battle. Most of the Serbian victories over Byzantium were result of succesful ambushes....
yes i'm aware of that, serbian army its mostly light infantary, direct confront its the worse option, like you said embushes are the best option but we're working in more factions, so ill keep an eye here for more suggestions,because this really helps to build a roster
