I think you forgot some, the Dai Viet army used a lot of crossbow, javelin and scimitar. Especially crossbow was very popular, they used both single and multiple arrows crossbow (chu ko nu type)....

At first things seem unbalanced but after like 40 turns, it turns out ok as you now have a lot of units and only with that kind of money would make do. ...

same problem here, i had the patch 1+2+patch archive, i overwrote the Data folder , then run the 2 bat file, then run the Setup, and now the game always stop at the loading screen

sure, but for the now, all you have is bombard ( you can see the list of canon in the building tree), they're pretty good against archers. Use an army of 8 canons and the rest are Quakapulu ( sorry ,...

i think it depends on how long you intend to play:
_<70 turns : the Russ, they're really far and all their early troops suck
_80-140 turns:the Russ or the Turk
_>140 turns : the Turk for sure

you should try DLV btw, the rebel stuff really hurt there , as hell
