What are you basing the unit models on? Is it based on historical records and stuff or mostly fiction?
Also, do you plan on making units for non-playable factions?

Very wrong. The whole point of cavalry and ranged units is flexibility. They can't win in a static stand off.

The whole point of engaging in battle on open fields, for both opponents, is flexibility. I don't know on what occasion IRL you would have to stand your ground in the midst of a desert.
