We haven't done anything about the formations ourselves yet, though we'd like to in the future. If anyone could be of help to us with adding some, or researching new ones, we'd greatly appreciate.

ROP 2.1 is the full installer. You don't need to have any earlier versions installed to be able to play it. (Thus you don't need Beta 2, or patches 2.01 and 2.02)
ROP 2.1 doesn't come with an uninstaller I'm afraid. Any uninstallers you may find are of earlier versions.
If you want to uninstall ROP 2.1, you should delete the folder it's installed in.
Actually we have our own .bat file packed with ROP 2.1, as we use several .pak files that vanilla doesn't use. It's in the data/packs folder of course.
The BI installation that comes with RTW gold tries to use some files of RTW itself. But since we have changed those files, BI won't be able to work.
I recommend using backups.

Depends on the units you want to edit, but most ROP textures are in "data\ROP\models_unit\textures". You will need to unpack them from the .pak files. For instructions, check the "data\packs" folder.

Try to change some video card settings with respect to the campaign map. Also enabling features that are disabled right now might help (I hope it does in your situation - at least for battles it...
