Yeah, that should get rid of the hunting bow. I tried doing it with their Armour as well, but so far have had no luck..

No, there is a few things you can do through console commands though: Removeitem 10e2dd 1 -> Will remove the hunting bow, every companion have around four of them for some reason so you will need to do it until they are empty. This solves the biggest bug for companions not using the bows you assign them. The problems only occur with elven bows and above though, they use "Normal" bows like the forsworn ones just fine. Removeallitems -> Deletes their inventory, you can then add whatever you were giving them. However the default equipment respawn when you give them new gear so does not really work. But yeah, make the topic. This is all I have been able to dig up.
Did you ever find out how to disable default equipment on followers? Because if not im gonna create a new topic soon, its bloody annoying
